Scope goes in a written quotation. Anything discovered mid-job that changes the scope is re-quoted in writing before it is carried out, so the final invoice contains no line you are seeing for the first time.
Foundations to plastering
Their own summary of the work, and the honest measure of it. A renovation goes wrong in the gaps between trades — so there aren't any gaps. One company carries it from the dig to the final coat.
